My neighbor, Cathy, bakes the most delicious peach cobbler when she gets fresh peaches from a friend’s tree. (You may remember Cathy from my last post 9 Positive Things I’ve Experienced During the Pandemic.)
The sweet-tart peaches infused with spice and sweetness, covered in a crisp, yet buttery topping makes for the best cobbler.
Serve it warm out of the oven any day of the week and on special occasions, too. It’s that delicious!
Cathy bakes these delectable treats in individual glass containers. I just love that. They have lids, which are great for transporting. I suppose they make it easy to store leftovers, too, but I wouldn’t know. I mean, honestly, who has any warm, homemade peach cobbler leftovers?
Anyone?
Ingredients
8 fresh peaches, peeled and sliced
1/4 cup sugar
1/4 cup brown sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
1 tsp lemon juice
2 tsp corn starch
Topping:
1 cup flour
1/4 cup sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
6 Tbsp butter, chilled and cut into small cubes
1/4 cup boiling water
Instructions
Mix the first 7 ingredients and put into a 9 X 9 baking dish or individual glass containers.
Bake at 425° for 10 minutes.
Mix the next 6 ingredients in a bowl until the mixture is like coarse cornmeal.
Add water to form a dough.
Take the peaches out of the oven and drop spoonfuls of dough on top.
Bake at 425° for 30 minutes.
